Well, I’ve done it again! I’m nuts! Yep, C-R-A-Z-Y. A few weeks ago you may remember how very excited I was about being part of the Southern Living Photo Event with Blue Diamond Almonds? Well, I thought I understood the instructions to be Game Day, as in football. Period. But now as I read through it a second time – after I’ve made the snack, taken the pictures and uploaded them to Facebook, Twitter and Instagram; I discover that it was for college football – SATURDAY.
We are Auburn fans, yes, but my husband is a HUGE NFL fan. We subscribe to the RedZone channel, birthday and Christmas gifts usually include a NFL jersey of some sort; and Sundays, Mondays and some Thursdays for about six months of the year, I am a NFL widow. So in my mind, those are the true “game-days.” I know, I know! I live in the state of Alabama where college football is worshipped by most and NFL Sunday’s are just ceremonial.
Regardless, I made a delicious game day snack with Blue Diamond Almonds that my #ONE NFL fan absolutely loved. My sweet friend, Prissy, shared this recipe with me after my post about the event. Her words were, “you will not be able to stop eating this!” Boy, was she right! My diet has spiraled out of control, I scored BIG with my hubby, and while I may have fumbled on the one yard line with Southern Living, I can say this…
BLUE DIAMOND ALMONDS are F-A-Ntastic!
1 Bag Popcorn, unpopped kernels removed.
3 cups Corn Chex
2 cups Cheerios
2 cups Blue Diamond Almonds
1 Stick Butter
1/3 cup Karo Syrup
1 cup Brown Sugar
1/2 teaspoon baking soda
1 teaspoon vanilla
Melt butter with syrup and brown sugar over medium heat. Once mixed, bring to a boil and boil for exactly 5 minutes without stirring. Remove from heat, add baking soda and vanilla. Pour mixture over cereal, mix and then bake in a 250 degree oven for 45 minutes. Cool on wax paper and ENJOY!
My sanity may be in question for assuming that game day could include NFL in the south, but my culinary choices were a touchdown – even if it was on the wrong field.
